This recipe for Calentita has been written in its original wording from an old, favourite, recipe book of ours.

Calentita is a sort of moist, flat, Yorkshire Pudding, made from chickpea flour as opposed to wheat flour. The Genoese settlers to Gibraltar, in the 18th century, brought this recipe with them and it resembles a similar Italian dish called Farinata.

CALENTITA RECIPE:

Ingredients

3 cups of chickpea flour, 6 cups of cold water, ¼ pint (approx) of olive oil, Salt and black pepper.

Method

Mix the flour and salt in a jug with the cold water and leave to stand for about 3 hours.

Pour the oil into a flat banking tin (or tray), allowing sufficient oil to cover the bottom of the tin and heat in a hot oven (reg. 8).

When the oil is thoroughly hot, take the tray out and pour in the flour mixture (beating it well before doing so). Quickly sprinkle black pepper over the surface and pop back into the oven to bake for about ½ an hour, until a golden crust forms on the top.

Remove the Calentita from the oven and leave it to cool and set before cutting into squares.
